Loukoumades, a traditional Greek dessert

Loukoumades are popular all around the Mediterranean, but in Greece, this delicacy is one of the most famous desserts, especially at holidays. They have roots in deep antiquity, although their present name is borrowed from Arabic or Turkish. The ancestor of the modern loukoumades is the historical Greek honey-cake enkris, which was mentioned from Callimachus and Archestratus as being prepared from a dough-ball fried in hot olive oil.

Loukoumades are considered as the Greek version of doughnuts, and they are definitely worth a try. They are crispy and golden on the outside, fluffy and airy on the inside. In Greece, loukoumades are a part of Greek culture and family gatherings. This delicacy is great during winter, as it is served hot, but it still remains a very good choice at any time of the year. For this reason, you can see in Athens and other cities many young and old people at squares eating loukoumades while enjoying the company of their friends.

Ingredients: You will need 500 gr. flour, 2 teaspoons yeast, 1 teaspoon salt, 2 teaspoons cinnamon, warm water and olive. For the syrup, you need 2 cups honey, 1 cup sugar, 1 cinnamon stick and 2 cups water.
Directions: Mix flour and salt in a bowl and slowly add yeast, dissolved in lukewarm water, until the mixture is well mixed. Add warm water and then, when you have a medium paste, cover the bowl and leave the paste in warm water for about one hour. After that, form the batter in bubbles, heat oil and cook them until they turn golden brown. Remove the bubbles from the oil, drain on kitchen paper and make the syrup. For the syrup, boil honey, sugar, cinnamon and water for ten minutes. Pour it over loukoumades and dust generously with cinnamon powder. To serve, place four or five fried puffs into a small plate.

Remember that loukoumades are best eaten warm, the same day they are made. The portions of the recipe are enough for 5 people, so invite your friends and enjoy these delicious mouthfuls, which are impossible to resist. Your cooking skills will definitely be the talk of the evening.
